This tomato bacon avocado salad tastes like summer—no matter what time of year it is! Turn a favorite BLT sandwich into a salad by serving Romaine lettuce, thick bacon, and tomatoes and crumbled blue cheese with a homemade sundried tomato vinaigrette.
8slicesthick-cut baconcooked and cut into 1-inch pieces
2medium tomatoeschopped
1/2cupblue cheese crumbles
1avocadosliced
Dressing
5sun-dried tomatoesfinely chopped
2tablespoonsapple cider vinegar
1clovegarlicminced
1/4teaspoonkosher salt
1/8teaspoonpepper
1/3cupolive oil
Instructions
In a blender or food processor, combine sundried tomatoes, vinegar, garlic, salt and pepper. Pulse to mix. Set the blender or food processor to low and slowly add olive oil until fully incorporated. Set aside.
In a large bowl, combine romaine, bacon, tomato, blue cheese, and avocado. Pour sun-dried tomato dressing over salad and toss to combine.
