A delicious low carb and keto waffle option, the chaffle is made with eggs, cheese, almond flour and baking powder. The addition of scallions, bacon or green chiles make it savory.

1/2cupshredded cheeseI used Colby Jack
2eggs
1teaspoonalmond flour
1/8teaspoonbaking powder

Instructions
Heat the waffle maker.
In a small bowl, beat the eggs. Add the grated cheese, almond flour and pinch of baking powder. Mix until incorporated.
Pour just shy of 1/2 cup of mix into the waffle maker. Close the top and let the magic happen.
Open the waffle maker when the light turns green on your machine, or when you see a ton of steam rising if you don't have a green light. It takes about 4 minutes to cook the waffle until it's browned.
Note - I did not use non-stick cooking spray, but if your waffle maker doesn't have a non-stick finish, then you should definitely use non-stick cooking spray before applying the mix.
