Ingredients

  • 1 large Vidalia onion or 3 small sweet onions thinly sliced.
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 2 sprigs of thyme
  • 1 cup quark sour cream or Greek yogurt
  • 1 green onion thinly sliced
  • zest of lemon
  • 1 tablespoon juice of a lemon
  • salt and pepper

Instructions

  • Heat non-stick skillet over medium heat.  Add butter and olive oil.  Once butter is melted, add the sliced onions and sprigs of thyme.  Sprinkle a pinch of salt on the onions to draw out the moisture and help soften the onions.  Saute the onions, stirring frequently for about 40 minutes until the onions are a deep golden brown color.
  • Discard the thyme and let the onions cool.
  • Mix the caramelized onions, sour cream or yogurt, green onions, zest of lemon, lemon juice and salt and pepper in a medium bowl until well combined.
  • Serve with crunchy peppers, celery, carrots, potato chips, thin crisps or your favorite crackers.
