Blackened Salmon With Peach Salsa

Spicy blackened salmon topped with sweet and spicy peach salsa come together for the quintessential summer meal!

Ingredients

Blackened Seasoning

  • 1 1/2 teaspoons cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon cayenne pepper - this is spicy so you can sub chili powder if you don't like heat
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon garlic powder
  • 4-5 6 oz fillets salmon
  • olive oil

Peach Salsa Ingredients

  • 1 peach diced
  • 1/4 cup red bell peppers diced
  • 1/4 cup red onion diced
  • 1/2 jalapeno seeds and ribs removed, diced
  • 1 lime juiced
  • 4-5 fresh mint leaves thinly sliced
  • salt and pepper to taste

Instructions

  • Heat the grill over medium-high heat
  • In a small bowl, combine the cumin, paprika, cayenne pepper, salt, pepper and garlic powder and stir to mix.
  • Brush the salmon on both sides with olive oil.
  • Generously sprinkle the blackened seasoning over the salmon.
  • Place the salmon on the hot grill flesh side down.  Cook for 5 - 6 minutes.
  • Flip and cook for another 5 minutes until the salmon is cooked through, but still glossy pink inside.
  • While the salmon is cooking, combine the peach salsa ingredients in a small bowl.
  • Top the salmon with fresh peach salsa and serve.
