Ingredients
1onionchopped
1garlic cloveminced
1poundItalian sausage roll
8lasagna noodlesbroken into pieces
128 ounces can crushed tomatoes
18 ounces can tomato sauce
1/2tspsalt
1/4tsppepper
1Tbspground Italian seasoning
2cupschopped fresh spinach
1/2cupricotta cheese
4ouncesfresh mozzarella cheesesliced
1/4cupgrated Parmesan cheese
Fresh chopped basil for garnishoptional
Instructions
Heat a large skillet over medium-high heat. Cook onion and garlic for 2 minutes until soft and fragrant.
Add sausage to the skillet, breaking into smaller pieces. Cook until browned and crumbly, 5 to 7 minutes.
Pour crushed tomatoes and tomato sauce over sausage, add Italian seasoning, salt, and pepper and mix well.
Layer broken noodles over sausage and tomato mixture. Gently stir to moisten noodles.
Bring to a boil.
Cover skillet, reduce heat and simmer until noodles are cooked and sauce is thickened about 25 minutes.
Add ricotta cheese in large dollops around the skillet then smooth with a spatula to create a thin layer. Add chopped spinach, and top with sliced mozzarella cheese; cover skillet and cook for another 5 minutes to melt the cheeses. Remove from heat and top with Parmesan cheese and let sit for a couple of minutes before serving.
