Skillet Lasagna

Make lasagna in 30 minutes with this delicious Skillet Lasagna recipe. Layers of Italian sausage, noodles, cheese, spinach and sauce make this an easy weeknight dinner!

Ingredients

  • 1 onion chopped
  • 1 garlic clove minced
  • 1 pound Italian sausage roll
  • 8 lasagna noodles broken into pieces
  • 1 28 ounces can crushed tomatoes
  • 1 8 ounces can tomato sauce
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1 Tbsp ground Italian seasoning
  • 2 cups chopped fresh spinach
  • 1/2 cup ricotta cheese
  • 4 ounces fresh mozzarella cheese sliced
  • 1/4 cup grated Parmesan cheese
  • Fresh chopped basil for garnish optional

Instructions

  • Heat a large skillet over medium-high heat. Cook onion and garlic for 2 minutes until soft and fragrant.
  • Add sausage to the skillet, breaking into smaller pieces.  Cook until browned and crumbly, 5 to 7 minutes.
  • Pour crushed tomatoes and tomato sauce over sausage, add Italian seasoning, salt, and pepper and mix well.
  • Layer broken noodles over sausage and tomato mixture.  Gently stir to moisten noodles.
  • Bring to a boil.
  • Cover skillet, reduce heat and simmer until noodles are cooked and sauce is thickened about 25 minutes.
  • Add ricotta cheese in large dollops around the skillet then smooth with a spatula to create a thin layer.  Add chopped spinach, and top with sliced mozzarella cheese; cover skillet and cook for another 5 minutes to melt the cheeses.   Remove from heat and top with Parmesan cheese and let sit for a couple of minutes before serving.
  • Garnish with fresh chopped basil and serve
