Greek Zucchini Noodles (Zoodles)

Fresh spiralized zucchini noddles are tossed with garlic, onions, tomatoes, Kalamata olives and topped with feta cheese for the Ultimate Greek Style Zoodles dish!

Ingredients

  • 1 zucchini spiralized
  • 1 garlic clove, minced
  • 1/4 cup onion, chopped
  • 1/4 cup cherry or grape tomatoes, halved
  • 1 teaspoon olive oil
  • salt and pepper to taste
  • 1/4 cup feta cheese crumbles

Instructions

  • Spiralize zucchini into long thin strands.
  • Heat olive oil over medium heat and add garlic and onions.  Heat until softened.
  • add zucchini and stir to incorporate garlic, onions and zucchini.  Cook zucchini noodles for 2-3 minutes until softened
  • Add tomatoes and olives and cook for another 2 minutes.
  • Add salt and pepper, stir and remove from heat.
  • top with feta cheese crumbles and enjoy.
