Ingredients

  • 2 cans of tuna $.89
  • 1 lb. spaghetti or your choice of pasta ($.88)
  • 1 lemon zest and juice $.59
  • 1/4 cup chopped Kalamata olives $.99
  • 1 cup fresh spinach chopped ($.75)
  • 1/2 cup chopped tomatoes $.45
  • 2 oz feta cheese parmesan can also be substituted ($1.66)
  • 2 tablespoons olive oil $.29
  • 1 teaspoon salt and pepper $.03
  • 1/2 teaspoon dried oregano $.03
  • capers optional

Instructions

  • Prepare pasta noodles according to package directions until al dente.
  • While pasta is boiling, in a large bowl, combine drained tuna, olives, chopped spinach, chopped tomatoes, feta cheese, and lemon zest in a large bowl.  Stir to combine.
  • In a separate bowl or mason jar with a lid, combine the juice of a lemon and 2 tablespoons olive oil, 1 teaspoon salt, 1 teaspoon freshly cracked black pepper and 1/2 teaspoon dried oregano.   Stir or shake well to combine.
  • Toss the tuna mixture with the cooked spaghetti.  Drizzle with the lemon olive oil dressing and toss to coat.
  • Taste for seasoning and season with additional salt and pepper if desired.
