Ingredients

  • 2 cups rolled oats
  • 1 1/2 teaspoons ground cinnamon
  • 1 teaspoon baking powder
  • 1/2 teaspoon sea salt
  • 1/2 cup of pecans
  • 2 cups almond milk
  • 1 large egg
  • 2 tablespoons coconut oil melted
  • 1/4 cup pure maple syrup
  • 2 teaspoons pure vanilla extract
  • 2 apples diced
  • 1/2 cup blueberries
  • 1/2 cup Open Nature Maple Pecan Granola
  • cooking spray coconut oil spray is great

Instructions

  • Preheat the oven to 375°F.
  • Spray an 8-inch square baking dish with cooking spray.
  • In a large bowl, combine the oats with ground cinnamon, baking powder, sea salt, and pecans.
  • Add in the milk, egg, maple syrup, coconut oil, vanilla, apples, and blueberries.  Stir well to combine.
  • Pour the oatmeal into the prepared baking dish.
  • Top with granola.
  • Bake for 35 for 40 minutes until the top is nicely golden.  Remove from the oven and allow to cool slightly.  Serve with warm maple syrup.
