Maple Pecan Baked Oatmeal
This Maple Pecan Baked Oatmeal with apples and blueberries is filled with wholesome oats, chopped pecans, and sweetened with pure maple syrup. Perfect for a make-ahead breakfast option throughout the week or for a fall brunch.
Cold and snowy days are made for baked oatmeal. You can make the oatmeal mostly out of pantry ingredients. I like to add fresh blueberries and fresh apples to increase the nutrients, add sweetness, and delicious flavor.
This is a perfect make-ahead meal for breakfast for the week. I like to make a big batch on Sunday morning and save the leftovers for a couple of breakfasts throughout the week.
The kids can serve themselves and can reheat the oatmeal in the microwave for just one minute to have a filling, wholesome breakfast. Perfect for the rush of the busy school mornings.

Ingredients
This maple pecan baked oatmeal is made with mostly pantry staples. If you don’t have fresh blueberries on hand – you can omit, or use frozen.
- 2 cups rolled oats
- 1 1/2 teaspoons ground cinnamon
- 1 teaspoon baking powder
- 1/2 teaspoon sea salt
- 1/2 cup of pecans
- 2 cups almond milk
- 1 large egg
- 2 tablespoons coconut oil, melted
- 1/4 cup pure maple syrup
- 2 teaspoons pure vanilla extract
- 2 apples, diced
- 1/2 cup blueberries
- 1/2 cup Open Nature Maple Pecan Granola
- cooking spray (coconut oil spray is great)
How to Make Baked Oatmeal
Preheat the oven to 375°F.
Spray an 8-inch square baking dish with cooking spray.
In a large bowl, combine the oats with ground cinnamon, baking powder, sea salt, and pecans.
Add in the milk, egg, maple syrup, coconut oil, vanilla, apples, and blueberries. Stir well to combine.
Pour the oatmeal into the prepared baking dish.
Top with granola.
Bake for 35 for 40 minutes until the top is nicely golden. Remove from the oven and allow to cool slightly. Serve with warm maple syrup.
