Eggplant Pizza

Ingredients

  • Eggplant sliced 1/4 inch thick
  • pinch of Salt
  • 1/4 cup Olive Oil
  • 1 1/2 cups Marinara Sauce
  • 8 oz Mozzarella Cheese
  • Basil thinly sliced

Instructions

  • Slice the eggplant into 1/4 inch pieces.
  • Salt the eggplant and set on paper towels to draw out some of the moisture - for about 5 minutes.
  • Heat a grill pan or large skillet over medium heat.
  • Brush the eggplant with oil on both sides then set on grill pan.
  • Grill the eggplant for about 5 minutes on each side.
  • Once the eggplant is golden brown, top with a thin layer of marinara sauce, then top with mozzarella cheese. Heat for another 2 minutes until the cheese is melted.  Top with freshly sliced basil and enjoy.

Notes

If you do not own a grill pan, you can also roast the eggplant in a 350° F oven for 15 minutes - turning once while roasting.
