Eggplant Pizza

If you love eggplant parmesan but hate the work involved in making it – eggplant pizzas are a perfect alternative as you get the delicious gooey eggplant, tomato sauce, cheese flavors – but with half the calories and a third of the time!

Ingredients

  • Eggplant sliced 1/4 inch thick
  • pinch of Salt
  • 1/4 cup Olive Oil
  • 1 1/2 cups Marinara Sauce
  • 8 oz Mozzarella Cheese
  • Basil, thinly sliced

How to Make Eggplant Pizza

Slice the eggplant into 1/4 inch pieces.

Salt the eggplant and set on paper towels to draw out some of the moisture – for about 5 minutes. 

Heat a grill pan or large skillet over medium heat. 

Brush the eggplant with oil on both sides then set on the grill pan. 

Grill the eggplant for about 5 minutes on each side.

Once the eggplant is golden brown, top with a thin layer of marinara sauce, then top with mozzarella cheese. Heat for another 2 minutes until the cheese is melted.  Top with freshly sliced basil and enjoy. 

Note:

If you do not own a grill pan, you can also roast the eggplant in a 350° F oven for 15 minutes – turning once while roasting.
