Ingredients
2/3cuproasted tomatoes
16ozsliced buffalo mozzarella cheese
16-20O Organics® fresh basil leaves
1Tbsbalsamic syrup
1/2tspkosher salt
black pepper to taste
Roasted Roma Tomatoes
12Roma tomatoesdiced into 3/4 to 1-inch pieces
5Tbsextra virgin olive oildivided
1tspkosher salt
pepper to taste
Instructions
Preheat oven to 450°.
On a rimmed baking sheet combine tomatoes, 3 tablespoons olive oil, salt and pepper by tossing together.
Bake for 40-45 minutes. Remove from oven and let cool.
Place in desired storage container and drizzle additional 2 tablespoons olive oil. Store in refrigerator until use. Makes about 2 cups.

In a mixing bowl, combine tomatoes, cheese, basil leaves, salt and pepper.
