Roasted Tomato Caprese Salad
Caprese Salads with fresh roma tomatoes, basil, mozzarella cheese and a balsamic glaze are amazing anytime of year, but especially at the end of the summer when you can use your tomato and basil bounty from your garden. If you don’t garden, you can still use fresh tomatoes from Safeway, on sale for just $.97/lb. to make this Roasted Tomato Caprese Salad.
Roasting the tomatoes imparts a sweetness and a slight smokiness that you don’t get from the fresh tomatoes. I made this as a salad for my family and it was definitely different and everyone enjoyed it! Especially my husband who doesn’t care for tomatoes at all. The tomatoes have a completely different texture and flavor profile when they are roasted. It’s definitely a winning combination.
To make a balsamic glaze, simply heat 2 TBSP of balsamic vinegar over medium heat until it reduced by half. Cool then drizzle over the salad.

Roasted Tomato Caprese Salad
Ingredients
- 2/3 cup roasted tomatoes
- 16 oz sliced buffalo mozzarella cheese
- 16-20 O Organics® fresh basil leaves
- 1 Tbs balsamic syrup
- 1/2 tsp kosher salt
- black pepper to taste
Roasted Roma Tomatoes
- 12 Roma tomatoes diced into 3/4 to 1-inch pieces
- 5 Tbs extra virgin olive oil divided
- 1 tsp kosher salt
- pepper to taste
Instructions
- Preheat oven to 450°.
- On a rimmed baking sheet combine tomatoes, 3 tablespoons olive oil, salt and pepper by tossing together.
- Bake for 40-45 minutes. Remove from oven and let cool.
- Place in desired storage container and drizzle additional 2 tablespoons olive oil. Store in refrigerator until use. Makes about 2 cups.
Caprese Instructions:
- In a mixing bowl, combine tomatoes, cheese, basil leaves, salt and pepper.
- Drizzle with balsamic glaze and toss. Serve.
