Lasagna Quesadillas

  • 4 whole wheat large tortillas 12 inch
  • 2 large ripe beefsteak tomatoes
  • 16 leaves fresh basil
  • 8 oz fresh mozzarella
  • 3/4 cup ricotta cheese


  • Spray a large skillet with nonstick spray and heat to medium.
  • Spread 3 tablespoons ricotta over a tortilla and place in pan.
  • On one side of the tortilla, place 2-3 slices of tomato. On the other side of the tortilla, place 2 ounces fresh mozzarella
  • Sprinkle 4 fresh basil leaves over the whole tortilla. Fold tortilla in half. Let cook a couple minutes until cheese is melted.
