3cupsprepared couscous
1/2medium red onioncut into 2 pieces with root end intact
1cupcherry tomatoesdouble skewered
1yellow bell peppercut in half seeds and stem removed
1medium zucchinicut in half lengthwise
zest and juice of 1 lemon
1/2tspkosher saltdivided
1/2tspground cumin
1/2tspground coriander
7Tbsextra-virgin olive oildivided
Instructions
Brush vegetables with 1 tablespoon olive oil and season with 1/4 teaspoon salt. Place on preheated grill set to medium heat (350-400°). Grill tomatoes about 4-5 minutes and remove. Continue to grill remaining vegetables about 3-5 minutes more until "al dente." Remove from grill and let cool.
In a small bowl, whisk together lemon, remaining salt, cumin, coriander and olive oil.
Chop vegetables into bite-sized pieces and add to couscous. Drizzle with dressing and lightly mix. Garnish with minced herb, if desired. Serve.
