Lemon Couscous Recipe With Grilled Vegetables

Ingredients

  • 3 cups prepared couscous
  • 1/2 medium red onion cut into 2 pieces with root end intact
  • 1 cup cherry tomatoes double skewered
  • 1 yellow bell pepper cut in half seeds and stem removed
  • 1 medium zucchini cut in half lengthwise
  • zest and juice of 1 lemon
  • 1/2 tsp kosher salt divided
  • 1/2 tsp ground cumin
  • 1/2 tsp ground coriander
  • 7 Tbs extra-virgin olive oil divided

Instructions

  • Brush vegetables with 1 tablespoon olive oil and season with 1/4 teaspoon salt. Place on preheated grill set to medium heat (350-400°). Grill tomatoes about 4-5 minutes and remove. Continue to grill remaining vegetables about 3-5 minutes more until "al dente." Remove from grill and let cool.
  • In a small bowl, whisk together lemon, remaining salt, cumin, coriander and olive oil.
  • Chop vegetables into bite-sized pieces and add to couscous. Drizzle with dressing and lightly mix. Garnish with minced herb, if desired. Serve.
