- couscous
- red onion
- cherry tomatoes
- yellow bell pepper
- zucchini
- lemon
- salt
- cumin
- coriander
- olive oil

To prepare the grilled vegetables:
Brush vegetables with 1 tablespoon olive oil and season with 1/4 teaspoon salt.
Place on a preheated grill set to medium heat (350-400°). Grill tomatoes for about 4-5 minutes and remove.
Continue to grill remaining vegetables for about 3-5 minutes more until “al dente.”
Remove from grill and let cool. 2. In a small bowl, whisk together lemon, remaining salt, cumin, coriander, and olive oil. 3. Chop vegetables into bite-sized pieces and add to the couscous. Drizzle with dressing and lightly mix. Garnish with minced herb, if desired. Serve.
Notes:
1. For added heat, add 1/2 teaspoon chili powder to the dressing
2. Don’t feel like grilling? Add the vegetables raw.
3. For easy cleanup, chop vegetables and place them in a foil packet. Grill 6-9 minutes, then add to the couscous.
