Slow Cooker White Chicken Chili
A warm and comforting dish, this slow cooker white chicken chili is a welcome addition to your weeknight meal rotation.

- 1 pound boneless skinless chicken breasts chopped
- 1 medium onion chopped
- 1 tablespoon olive oil
- 2 garlic cloves minced
- 1 carton chicken broth
- 1 4 oz can chopped green chiles
- 2 teaspoons ground cumin
- 2 teaspoons dried oregano
- 3 cans great northern beans or white cannellini beans rinsed and drained
- salt and pepper to taste
- 1/2 cup sour cream
- 1 cup shredded Monterey Jack cheese optional
- Sliced jalapeno pepper optional
In a slow cooker, add the chicken breasts, chopped onion, green chiles, garlic, oregano, cumin, salt and pepper and rinsed beans.
Cover and cook on low heat for 2 - 3 hours
Remove the chicken and shred, or cube if you prefer. Once shredded, add back to the slow cooker.
Add sour cream and stir until combined
Serve and top each bowl with shredded cheese, tortilla strips and jalapeno peppers if desired.
