Chinese Chicken Mandarin Salad

Use fresh mandarin orange segments tossed with crunchy cabbage, ramen, avocados, scallions, and edamame and grilled chicken topped with a citrus Asian dressing.

Ingredients

  • Salad Ingredients
  • 3 cups chopped Romaine lettuce or green cabbage
  • 2 cups shredded red cabbage
  • 2-3 fresh mandarin oranges peeled and segments separated
  • 1/2 cup shredded carrot
  • 1/3 cup sliced green onions
  • 1/4 cup sliced almonds toasted
  • 1/2 cup edamame cooked
  • 2 - 3 boneless skinless chicken breasts, grilled
  • Dressing
  • 3 tablespoons rice wine vinegar
  • 2 tablespoons honey
  • 1 tablespoon sesame oil
  • 2 tablespoons soy sauce
  • 1 teaspoon minced ginger
  • 1 clove garlic
  • 1/4 cup olive oil or avocado oil
  • 1/4 cup fresh orange juice
  • zest of an orange

Instructions

  • Preheat the grill to medium-high heat to grill the chicken.
  • Drizzle the chicken with olive oil, salt and pepper and grill about 5 to 6 minutes on each side until it's cooked to 160 degrees internal temperature.
  • Prepare the dressing by combining the olive oil, honey, soy sauce, rice wine vinegar, orange juice, orange zest, minced garlic and minced ginger in a mason jar.  Shake vigorously to combine.
  • Toss shredded romaine, red cabbage, cooked edamame, mandarin orange segments, green onions and toasted almonds in a large bowl.
  • Slice the chicken and add to the salad.  Top with dressing just before serving.
