3cupschopped Romaine lettuce or green cabbage
2cupsshredded red cabbage
2-3fresh mandarin orangespeeled and segments separated
1/2cupshredded carrot
1/3cupsliced green onions

Dressing
3tablespoonsrice wine vinegar
2tablespoonshoney
1tablespoonsesame oil
2tablespoonssoy sauce
1teaspoonminced ginger
1clovegarlic
1/4cupolive oilor avocado oil
1/4cupfresh orange juice
zest of an orange
Instructions
Preheat the grill to medium-high heat to grill the chicken.
Drizzle the chicken with olive oil, salt and pepper and grill about 5 to 6 minutes on each side until it's cooked to 160 degrees internal temperature.
Prepare the dressing by combining the olive oil, honey, soy sauce, rice wine vinegar, orange juice, orange zest, minced garlic and minced ginger in a mason jar. Shake vigorously to combine.
Toss shredded romaine, red cabbage, cooked edamame, mandarin orange segments, green onions and toasted almonds in a large bowl.
Slice the chicken and add to the salad. Top with dressing just before serving.
