This Chinese Chicken Mandarin Salad uses fresh mandarin orange segments tossed with chopped romaine, cabbage, edamame, and toasted almonds topped with grilled chicken.  It’s tied together with a delicious homemade citrus Asian dressing that you can make with pantry staples.

Chinese Chicken Mandarin Salad

Now that the weather is HOT, lighten up your meals by incorporating more salads.  This Chinese Chicken Mandarin Salad uses fresh mandarin orange segments tossed with chopped romaine, cabbage, edamame, and toasted almonds topped with grilled chicken.  It’s tied together with a delicious homemade citrus Asian dressing that you can make with pantry staples.

While most mandarin salads are made with canned fruit, I find it overly sweet and the orange segments fall apart.  I prefer to use fresh mandarin oranges in my salads.  They are naturally sweet and add a delicious freshness to a salad.

You can serve this salad on its own, with grilled chicken or with grilled salmon.  It’s delicious and a great way to get your kids to eat their veggies too!

The salad comes together in just 20 minutes and uses ingredients on sale at Safeway.  Safeway has 2 lb. bags of mandarin oranges on sale for $2.97 with a digital coupon and boneless, skinless chicken breasts on sale for $1.87/lb.  Add some healthy avocado, which is also on sale for $1.25 each to round out your salad.

For the edamame, you can find shelled edamame in the frozen food aisles with the frozen veggies.  I simply place the desired amount in a bowl, cover it with water and cook in the microwave for one minute to thaw the edamame.

 

Salad Ingredients

  • 3 cups chopped Romaine lettuce or green cabbage
  • 2 cups shredded red cabbage
  • 2-3 fresh mandarin oranges, peeled and segments separated
  • 1/2 cup shredded carrot
  • 1/3 cup sliced green onions
  • 1/4 cup sliced almonds, toasted
  • 1/2 cup shelled edamame, cooked
  • 2 – 3 boneless, skinless chicken breasts, grilled

Dressing

  • 3 tablespoons rice wine vinegar
  • 2 tablespoons honey
  • 1 tablespoon sesame oil
  • 2 tablespoons soy sauce
  • 1 teaspoon minced ginger
  • 1 clove garlic
  • 1/4 cup olive oil (or avocado oil)
  • 1/4 cup fresh orange juice
  • zest of a mandarin orange

How to Make Chinese Chicken Mandarin Salad

Preheat the grill to medium-high heat to grill the chicken.

Drizzle the chicken with olive oil, salt, and pepper and grill about 5 to 6 minutes on each side until it’s cooked to 160 degrees internal temperature.

Prepare the dressing by combining the olive oil, honey, soy sauce, rice wine vinegar, orange juice, orange zest, minced garlic, and minced ginger in a mason jar.  Shake vigorously to combine.

Toss shredded romaine, red cabbage, cooked edamame, mandarin orange segments, green onions, and toasted almonds in a large bowl.

Let the chicken rest for 5 minutes before slicing so that the juices get redistributed into the breast.

Slice the chicken and add to the salad.  Top with dressing just before serving.
