Place a sheet of foil on a baking sheet. Place the salmon on the baking sheet and drizzle with extra virgin olive oil. Season the salmon with salt, pepper, dried oregano or your favorite bottled seasoning blend. I recommend McCormick Grill Mates Montreal Seasoning or Kinders The Blend Seasoning.
Arrange the sliced lemons, tomatoes, zucchini, olives, and onions around the sheet pan. You'll want them to have room to roast on the foil, so don't crowd the pan, use the entire surface area.
Drizzle the veggies with extra virgin olive oil and season with salt, pepper and dried oregano.
Arrange fresh springs of thyme and rosemary on the salmon, for extra flavor.
Place the sheet pan directly on the grill and close the lid. Grill over medium-high to high heat for 15 to 18 minutes until the salmon is cooked through, but not dry.
Notes
If you wish to bake the salmon - you can do that as well. Simple preheat the oven to 425 degrees before assembling the salmon and veggies on the sheet pan.
