You can assemble the salmon and veggies on a sheet pan and place it directly on the hot grill. No need to heat the oven this summer – keep your house cool, while using the grill to get all the delicious flavors of the Mediterranean. This recipe will wow adults and kids alike!
No need to turn the salmon as long as you keep the lid of the grill closed. You’ll have no problem getting the fish and veggies to cook through with that delicious grilled char you love. Be sure to spread the veggies out on the foil so they have direct heat from the grill. If they are layered over the salmon, they will soften and steam, but will not get the grilled caramelization or char that you want.

Ingredients
- Salmon
- red onion
- cherry or grape tomatoes
- zucchini
- kalamata olives
- lemon
- olive oil
- garlic
- salt
- pepper
- dried oregano
- fresh rosemary
- fresh thyme or oregano
How to Cook Mediterranean Salmon
Heat the grill to medium-high heat.
Place a sheet of foil on a baking sheet. Place the salmon on the baking sheet and drizzle with extra virgin olive oil. Season the salmon with salt, pepper, dried oregano or your favorite bottled seasoning blend. I recommend McCormick Grill Mates Montreal Seasoning or Kinders The Blend Seasoning.
Arrange the sliced lemons, tomatoes, zucchini, olives, and onions around the sheet pan. You’ll want them to have room to roast on the foil, so don’t crowd the pan, use the entire surface area.
Drizzle the veggies with extra virgin olive oil and season with salt, pepper and dried oregano.
Arrange fresh springs of thyme and rosemary on the salmon, for extra flavor.
Place the sheet pan directly on the grill and close the lid. Grill over medium-high to high heat for 15 to 18 minutes until the salmon is cooked through, but not dry.
If you wish to bake the salmon – you can do that as well. Simple preheat the oven to 425 degrees before assembling the salmon and veggies on the sheet pan.

- 1/2 lemon sliced

- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 teaspoon dried oregano
- sprig fresh rosemary
- 1 sprig fresh thyme or oregano
Instructions
