Strawberry Watermelon Salad With Tomatoes and Mint

Ingredients

Salad

  • 1 cup cherry or grape tomatoes halved
  • 2 cups watermelon cubed
  • 1 1/2 cups strawberries quartered
  • 2 tablespoons fresh mint thinly sliced

Dressing

  • 1/4 cup olive oil
  • 1 1/2 tablespoons balsamic vinegar
  • 1/2 tablespoon fresh lemon juice
  • 1/2 teaspoon sugar or maple syrup
  • 1 clove garlic smashed
  • sea salt and freshly ground pepper to taste

Instructions

  • To prepare the salad, slice the watermelon into 1/2 inch cubes and place it into a large serving bowl or platter.  Top with sliced strawberries halved tomatoes and fresh julienned mint.
  • Prepare the dressing by combining the olive oil, balsamic vinegar, lemon juice, sugar, smashed garlic clove, salt and pepper in a mason jar with a lid.  Shake vigorously with the lid on until combined.
  • Drizzle the dressing onto the salad just before serving, reserving the garlic clove in the jar.
  • The salad can be prepared a day in advance, but do not dress it until right before serving as the fruit will absorb the dressing and it can become soggy over time.
