Grilled Pesto Chicken Caprese
Tender chicken is marinated in a delicious pesto, then grilled and topped with fresh mozzarella cheese, tomatoes, basil, and a sweet balsamic glaze in this Grilled Chicken Caprese recipe.

2 chicken breasts sliced lengthwise 1/4 cup pesto 8 oz fresh mozzarella cheese sliced 2 vine ripe tomatoes sliced 4-5 fresh basil leaves thinly sliced balsamic glaze
Heat grill to medium heat.
Slice the chicken breasts in half lengthwise.
Brush the pesto onto both sides of the chicken.
Grill the chicken - 5 minutes on each side.
When you flip the chicken top with fresh mozzarella cheese and the sliced tomatoes
Remove from the heat when the chicken reaches 160 degrees and the juices run clear. The cheese will be gooey and melted.
Let the chicken rest for a few minutes to let the juices distribute evenly.
Top with fresh sliced basil and drizzle with balsamic glaze.
