The epic combination of smoked bacon, pungent blue cheese, sweet caramelized onions makes up this Ultimate Bacon Blue Cheese Burger. Rather than put the blue cheese crumbles on top, where they risk falling off, you stuff the burgers with the blue cheese so that you get the gooey cheese in every bite.

1tablespoonolive oil
5 - 6strips baconcooked
4ozblue cheese crumbles
1/2teaspoonsalt
1/4teaspoonground black pepper
brioche or sesame buns
green leaf lettuceoptional for garnish
Instructions
Cook the bacon in a skillet over medium heat on the stove. Set aside.
Preheat the grill to medium-high heat
Place the onions with the olive oil into a cast-iron skillet and place on the grill to cook the onions for about 15 minutes until soft and slightly caramelized. Stir often.
In a large bowl, gently mix together the ground beef, Worcestershire sauce, salt and pepper.
Divide the meat into 6 equal portions and form 5 5" patties. Create a 2" indentation in the center and add the blue cheese. Top with the left over ground beef to enclose the blue cheese.
Gently press the patty between your palms to flatten it a bit, being careful not to create any openings. Repeat with the remaining meat and cheese.
Oil the grill grates. When hot, add the burgers, leaving space to comfortably flip them, and grill 3 to 4 minutes on each side for medium.
Toast the buns on the top grill rack for a few minutes until heated through.
To assemble the burgers, arrange the bottom buns on a clean, dry work surface, top with green leaf lettuce, the burgers, caramelized onions, a slice of bacon and condiments of your choice. I recommend dijon mustard and ketchup.
