Bacon Blue Cheese Burger With Caramelized Onions

- 1.5 lbs. of 80% lean ground beef
- 1 tablespoon Worcestershire sauce
- 2 onions, thinly sliced
- 1 tablespoon olive oil
- 6 strips bacon, cooked
- 4 oz blue cheese crumbles
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
- brioche or sesame buns
- green leaf lettuce, optional for garnish

How to Make Bacon Blue Cheese Stuffed Burgers
The key to making good burgers is to not overwork the meat. The less you handle the meat, the more tender and juicy the burgers.
Cook the bacon in a skillet over medium heat on the stove. Set aside.
Preheat the grill to medium-high heat
Place the onions with the olive oil into a cast-iron skillet and place on the grill to cook the onions for about 15 minutes, until soft and caramelized. Stir often.
In a large bowl, gently mix together the ground beef, Worcestershire sauce, salt and pepper. Form the patties
Divide the meat into 5 equal portions and form each into 5″ patties. Create a 2″ indentation in the center and add the blue cheese. Top with ground beef to enclose the blue cheese.
Gently press the sphere between your palms to flatten it a bit, being careful not to create any openings. Repeat with the remaining meat and cheese.
Oil the grill grates. When hot, add the burgers, leaving space to comfortably flip them, and grill 3 to 4 minutes on each side for medium.
Toast the buns on the top grill rack for a few minutes until heated through.
To assemble the burgers, arrange the bottom buns on a clean, dry work surface, top with green leaf lettuce, the burgers, caramelized onions, a slice of bacon and condiments of your choice. I recommend dijon mustard and ketchup.
