Ingredients
1/2cupold fashioned rolled oats oats
1/2cupalmond milkor milk of choice
1/4cuppeach Greek yogurt or dairy-free yogurtI used Silk Greek Yogurt
1teaspoonhoney
1teaspoonchia seeds
1/2teaspooncinnamon plus extra for garnish
1/2fresh peachchopped
1tablespoonalmondsslivered or sliced
almond butteroptional
Instructions
In a medium bowl or large measuring cup, combine the oats, milk, yogurt, honey, chia seeds and cinnamon.
Stir well to combine. Pour the mixture into a glass jar, cup or mason jar with a lid. Cover with plastic wrap or a lid and refrigerate for a minimum of 2 hours, but overnight is best.
Just before serving, slice the peaches and top the overnight oats with the peaches, almonds, a spoon full of almond butter (if using) and a sprinkle of cinnamon.
