1 1/2poundspetite sirloin steaksliced into 1/2 inch wide pieces
1/3cupsoy sauce or coconut aminos
1tablespoonolive oil
1/2tablespoonsteak seasoning blend
1tablespoonhot saucelike sriracha

Instructions
Slice the steak against the grain into 1/2 inch-wide strips.
In a medium bowl, combine the soy sauce, hot sauce, olive oil, steak seasoning blend and add the steak strips. Stir to coat each piece of steak. Set aside until potatoes are cooked.
Heat a large non-stick or cast-iron skillet over medium-high heat. Add 1 tablespoon of butter and 1 tablespoon of olive oil to the skillet. When the oil is hot and shimmering, add the quartered potatoes to the skillet. Cook for 12-13 minutes until crispy and fully cooked, stirring often. Season the potatoes with salt and pepper to taste.
Remove the potatoes from the skillet to a plate and set them aside. Cover the potatoes with foil or a paper towel to retain the heat and help the interior steam for fluffy potatoes.
Add 2 tablespoons butter to the skillet along with garlic, red pepper chili flakes and fresh herbs. Place the steak strips into the skillet without crowding the pan. Sear the steak on both sides for 2-3 minutes until browned. Repeat with the remaining steak. Add the steak and potatoes to the skillet and stir to incorporate.
Taste for seasoning and adjust salt and pepper accordingly.
