Garlic Butter Steak & Potatoes

Tender marinated steak is pan-seared and served with perfectly cooked crispy potatoes in an herbed garlic butter sauce in this garlic butter steak & potatoes skillet recipe.  A perfect one-pot meal for weeknight dinners that comes together in under 30 minutes.

Ingredients

Steak & Marinade

  • 1 1/2 pounds petite sirloin steak sliced into 1/2 inch wide pieces
  • 1/3 cup soy sauce or coconut aminos
  • 1 tablespoon olive oil
  • 1/2 tablespoon steak seasoning blend
  • 1 tablespoon hot sauce like sriracha
  • 1 garlic clove minced

Potatoes

  • 1 1/2 lbs. Signature Farms Mini Gold Potatoes quartered
  • 3 tablespoons butter
  • 1 tablespoon olive oil
  • salt and pepper to taste
  • pinch red chili pepper flakes optional
  • 5 cloves garlic minced
  • 1 tablespoon fresh thyme
  • 1 tablespoon fresh rosemary chopped
  • 1 tablespoon fresh oregano chopped
  • 1/2 tablespoon fresh parsley chopped

Instructions

  • Slice the steak against the grain into 1/2 inch-wide strips.
  • In a medium bowl, combine the soy sauce, hot sauce, olive oil, steak seasoning blend and add the steak strips.  Stir to coat each piece of steak.  Set aside until potatoes are cooked.
  • Heat a large non-stick or cast-iron skillet over medium-high heat.  Add 1 tablespoon of butter and 1 tablespoon of olive oil to the skillet.  When the oil is hot and shimmering, add the quartered potatoes to the skillet.  Cook for 12-13 minutes until crispy and fully cooked, stirring often.  Season the potatoes with salt and pepper to taste.
  • Remove the potatoes from the skillet to a plate and set them aside.  Cover the potatoes with foil or a paper towel to retain the heat and help the interior steam for fluffy potatoes.
  • Add 2 tablespoons butter to the skillet along with garlic, red pepper chili flakes and fresh herbs.  Place the steak strips into the skillet without crowding the pan.  Sear the steak on both sides for 2-3 minutes until browned.  Repeat with the remaining steak.   Add the steak and potatoes to the skillet and stir to incorporate.
  • Taste for seasoning and adjust salt and pepper accordingly.
