Garlic Butter Steak Bites & Potatoes Skillet
Tender marinated steak is pan-seared and served with perfectly cooked crispy potatoes in an herbed garlic butter sauce in this garlic butter steak & potatoes skillet recipe. A perfect one-pot meal for weeknight dinners that comes together in under 30 minutes.
Petite sirloin steak is thinly sliced and marinated in a soy, garlic, and steak seasoning mixture to soak up delicious flavor before it even hits the skillet.
This recipe is dedicated to my 12-year-old son, who insists he is just a steak and potatoes kind of guy, and that he doesn’t enjoy all the healthy and unique recipes I’ve been making lately. He especially doesn’t like butternut squash or anything pumpkin, so I’ll let him eat his steak and potatoes while I share the recipe with you.
You too may have a family member who is not a foodie and just wants steak and potatoes. This is for all the meat and potato guys and gals out there.
By using fresh herbs, you elevate the dish from a basic steak to foodie-level steak so even the most discerning palates will enjoy this meal. ;-).
Pick up Lucerne butter, petite sirloin steaks, and mini Yukon gold potatoes on sale at Safeway to make this recipe for dinner this week.
Ingredients in Garlic Butter Steak
- petite sirloin steak – this steak is very lean and has virtually no fat. I like to use petite sirloin in recipes where the steak is sliced and quickly pan-seared rather than grilled. The steak can dry out quickly, so the marinade helps tenderize the steak and adds delicious flavor.
- soy sauce – the base of the steak marinade. It adds a great umami flavor and helps tenderize the steak before searing.
- olive oil – one of the marinade ingredients used to help adhere the marinade to the steak.
- steak seasoning blend – I used the new O Organics Steak Seasoning blend, but McCormick Grill Mates Montreal Steak Seasoning is another good option as is Kinder’s The Blend. I use a seasoning blend because it has everything in it – granulated garlic, onion, salt, pepper, and lemon.
- hot sauce – I used sriracha – this helps tenderize the steak and adds a great flavor, A little bit goes a long way.
- garlic – it’s important to infuse the steak with garlic flavor throughout each step, which is why we add one clove of minced garlic to the marinade and five cloves to the skillet to cook the steak.
- mini Yukon gold potatoes – waxier potatoes work best for this dish. They get crispy and still have a fluffy, creamy interior. Russets just don’t work here.
- butter is used to cook the steak and potatoes in addition to olive oil. Butter adds richness and flavor to the steak and potatoes when it’s infused with garlic and fresh herbs.
- salt and pepper – used to season the potatoes while cooking.
- red chili pepper flakes, optional – only if you like a little heat with your steak.
- fresh thyme, rosemary, oregano, and parsley – by using fresh herbs, you elevate the flavors in this dish. If you don’t have a comprehensive herb garden at home, you can find a pre-packaged beef herb blend in the produce department of your local Safeway. It will have parsley, rosemary, and oregano.
How to Make Garlic Butter Steak & Potatoes Skillet
Slice the steak against the grain into 1/2 inch-wide strips.
In a medium bowl, combine the soy sauce, hot sauce, olive oil, steak seasoning blend and add the steak strips. Stir to coat each piece of steak. Set aside until potatoes are cooked.
Heat a large non-stick or cast-iron skillet over medium-high heat. Add 1 tablespoon of butter and 1 tablespoon of olive oil to the skillet. When the oil is hot and shimmering, add the quartered potatoes to the skillet. Cook for 12-15 minutes until crispy and fully cooked, stirring often. Season the potatoes with salt and pepper to taste.
Remove the potatoes from the skillet to a plate and set them aside. Cover the potatoes with foil or a paper towel to retain the heat and help the interior steam for fluffy potatoes.
Add 2 tablespoons butter to the skillet along with garlic, red pepper chili flakes (if using), and fresh herbs. Place the steak strips into the skillet without crowding the pan. Sear the steak on both sides for 2-3 minutes until browned. Repeat with the remaining steak. Add the cooked steak and potatoes back to the skillet and stir to incorporate.
Taste for seasoning and adjust salt and pepper accordingly.

A vegetable is needed to make a complete meal so I suggest roasted broccoli or cauliflower or a side salad. Here are some options:

Garlic Butter Steak & Potatoes
Ingredients
Steak & Marinade
- 1 1/2 pounds petite sirloin steak sliced into 1/2 inch wide pieces
- 1/3 cup soy sauce or coconut aminos
- 1 tablespoon olive oil
- 1/2 tablespoon steak seasoning blend
- 1 tablespoon hot sauce like sriracha
- 1 garlic clove minced
Potatoes
- 1 1/2 lbs. Signature Farms Mini Gold Potatoes quartered
- 3 tablespoons butter
- 1 tablespoon olive oil
- salt and pepper to taste
- pinch red chili pepper flakes optional
- 5 cloves garlic minced
- 1 tablespoon fresh thyme
- 1 tablespoon fresh rosemary chopped
- 1 tablespoon fresh oregano chopped
- 1/2 tablespoon fresh parsley chopped
Instructions
