Ingredients

  • pizza dough
  • 1 tablespoon olive oil plus extra
  • 1 medium onion sliced
  • 2 tablespoons butter
  • 8 oz mushrooms sliced
  • salt and pepper to taste
  • 3 sprigs fresh thyme
  • 1 1/2 cups mozzarella cheese shredded
  • 2 tablespoons pinenuts toasted
  • arugula for garnish

White Pizza Sauce

  • 1 tablespoon butter
  • 1 tablespoon flour
  • 1/2 teaspoon garlic powder
  • 1/2 cup milk
  • 2 oz goat cheese
  • 2 tablespoons freshly grated parmesan cheese
  • salt and pepper to taste

Instructions

  • Prepare the pizza dough.   Roll the dough out on a parchment-lined baking sheet.
  • In a large non-stick skillet, heat olive oil over medium heat.  Add the sliced onions and cook over low to medium heat for 30 minutes, stirring often until the onions are soft and jammy. Season with salt and pepper.
  • Preheat the oven to 425° F.
  • Remove the onions from the skillet and add 2 tablespoons butter to the skillet.  Melt butter over medium-high heat.  Add the mushrooms and fresh thyme leaves.  Stir to coat and cook the mushrooms until golden and caramelized, about 6-8 minutes. Season with salt and pepper when the mushrooms are done cooking.
  • While the mushrooms are cooking, prepare the white sauce.  Heat 1 tablespoon of butter in a small skillet over medium heat.  Add the flour and cook the flour for one minute.  Add the milk and whisk vigorously until smooth.  Add the goat cheese, garlic powder, salt and pepper and stir until combined.
  • Assemble the pizza by layering the white sauce, then shredded mozzarella cheese, caramelized onions, mushrooms, toasted pine nuts and if desired arugula.  You can also top with fresh arugula once the pizza is baked.
  • Brush the outside of the crust with olive oil to ensure a golden brown and crisp crust.
  • Bake at 425° for 18 minutes.
