Mushroom Pizza With Caramelized Onions, Arugula and Goat Cheese
Full of umami goodness, this mushroom pizza with caramelized onions, goat cheese, and arugula is a perfect budget-friendly meal to feed a crowd. Creamy goat cheese is incorporated into a white pizza sauce that’s topped with sweet caramelized onions, caramelized mushrooms, gooey cheese, toasted pine nuts, and fresh arugula.
When mushrooms are cooked in butter and get golden and caramelized, they have a delicious flavor that is nothing like the slimy mushrooms you get from a local pizza joint. This mushroom pizza is full of flavor – even non-mushroom fans will love the pizza! Serve with a drizzle of hot honey to tie all the flavors together and you will have an epic pizza night.
While caramelizing onions can be a chore – it’s something that can totally be done ahead of time and you can store the caramelized onions in the refrigerator.
Ingredients in Mushroom Pizza
- pizza dough
- 1 tablespoon olive oil
- 1 medium onion, sliced
- 2 tablespoons butter
- 8 oz mushrooms, sliced
- salt and pepper to taste
- fresh thyme
- 1 1/2 cups mozzarella cheese, shredded
- pinenuts, toasted
- arugula for garnish
- olive oil for brushing crust
White Pizza Sauce
- 1 tablespoon butter
- 1 tablespoon flour
- 1/2 teaspoon garlic powder
- 1/2 cup milk
- 2 oz goat cheese
- parmesan cheese
- salt and pepper to taste
How to Make a Mushroom Pizza
Prepare the pizza dough. Roll the dough out on a parchment-lined baking sheet.
In a large non-stick skillet, heat olive oil over medium heat. Add the sliced onions and cook over low to medium heat for 30 minutes, stirring often until the onions are soft and jammy.
Preheat the oven to 425° F.
Remove the onions from the skillet and add 2 tablespoons butter to the skillet. Melt butter over medium-high heat. Add the mushrooms and fresh thyme leaves. Stir to coat and cook the mushrooms until golden and caramelized, about 6-8 minutes.
While the mushrooms are cooking, prepare the white sauce. Heat 1 tablespoon of butter in a small skillet over medium heat. Add the flour and cook the flour for one minute. Add the milk and whisk vigorously until smooth. Add the goat cheese, garlic powder, salt and pepper and stir until combined.
Assemble the pizza by layering the white sauce, then shredded mozzarella cheese, caramelized onions, mushrooms, toasted pine nuts and if desired arugula. You can also top with fresh arugula once the pizza is baked.
Brush the outside of the crust with olive oil to ensure a golden brown and crisp crust.
Bake at 425° for 18 minutes.
