These Simple No Bake Chocolate Peanut Butter Energy Balls make the perfect snack, breakfast, or even dessert! They're packed with protein and nutrients and taste like a Chocolate Peanut Butter Cookies.

Ingredients

  • 6 large Medjool dates pitted
  • 2 tablespoons pure maple syrup
  • 2 1/2 tablespoons water
  • 1/2 cup of old fashioned rolled oats
  • 2 tablespoons of ground flax seed
  • 1 tablespoon of black chia seeds
  • 3/4 cup of peanut butter
  • ½ cup of dark chocolate chips
  • 2 tablespoons cacao nibs

Instructions

  • Add rolled oats, ground flax seed, chia seeds, cacao nibs, peanut butter, dates, water, and maple syrup to food processor.
  • Pulse until ingredients are blended.
  • Add mixture to a large bowl, add in chocolate chip. Stir to combine.
  • Form energy bite mixture into 1" balls and place on parchment paper lined baking sheet.
  • Cover and place in refrigerator for 2 hours.
  • Serve!
