Chocolate Peanut Butter Energy Balls
If you are looking for a healthy snack, try these healthy no-bake chocolate peanut butter energy balls that taste like scrumptious oatmeal chocolate peanut butter cookies!
These energy balls have chia, flax, and cacao nibs to add protein, nutrition, and fiber. You could always add a tablespoon of protein powder if you wish, but I like them without.
On Sundays, I make a double batch of the energy bites and store in an airtight container for my kid’s lunches and for after school snacks.
These are also the perfect pick me up in lieu of coffee in the afternoon. They give you lasting energy and you feel satisfied with just one because they are chock full of goodness – healthy fats, protein, and fiber all from plant-based sources.
The first time I discovered cacao nibs was in the fall when I was testing Safeway’s Homemade Granola Bar recipe at home. These chocolate chip oatmeal granola bars were such a hit with my family, I’ve been experimenting with ways to use the cacao nibs in other snacks because they are so good for you. You can find cacao nibs in the baking aisle of your local Safeway.
Cacao nibs are high in antioxidants, full of fiber, high in magnesium, and potassium, and because they are the beans that chocolate comes from, they taste good too!
This is a perfect snack to make with the hot deals on peanut butter, chocolate chips, and oats at Safeway this week.
Ingredients:
These energy balls are naturally sweetened by the dates and by maple syrup. There is no processed sugar so you can feel good about eating these.

How to Make Energy Balls
Simply combine pitted dates with peanut butter, oats, pure maple syrup, cacao nibs, ground flaxseed, and chia seeds in a food processor.
Add the water and pulse until the ingredients are combined.
The mixture may look a little loose, but once you start to roll the balls, you’ll notice that they will tighten up and roll nicely. Add the chocolate chips after the other ingredients are combined so that you have large chocolate chips in each energy ball.

Wonderful! Thanks for the heads up on the coupon. The cacao nibs are always expensive! Great to save anyway we can.
I have never seen cacao nibs for sale. Where do you get them? Thanks.
Hi Arthur, Since every store has a different layout, I don’t know exactly where they are in your store, however try the produce dept next to the dried fruit and nuts, also try the organic and natural food aisle if your store has one and lastly try the baking aisle. The brand is Navitas Organic Cacao Nibs in a brown package.
