Mediterranean Tuna Stuffed Avocado Bowls

Tuna Tapas Avocado Bowls are a charming change from standard tuna sandwiches. You can whip up this Mediterranean tuna salad and serve it in a halved avocado in just ten minutes. Greek yogurt and lemon zest give it a fresh, tart flavor. Enjoy!

Ingredients

  • 6- ounce pouch Signature Kitchens® or canned albacore or solid white tuna packed in water
  • 2 Tbs Open Nature® plain Greek yogurt
  • 1 tsp Signature SELECT® extra virgin olive oil
  • 2 Tbs chopped green onion white and part of green
  • 3-4 stuffed extra-large green olives (or about 8 small, chopped)
  • 1 tsp finely chopped lemon zest
  • 2 Tbs Signature Kitchens® walnut pieces or pine nuts toasted
  • 1 avocado sliced in half, pit removed (keep or remove the peel as desired)

Instructions

  • In a medium bowl, toss together tuna (drained), yogurt, olive oil, green onion, green olives, lemon zest, and pine nuts. Stir the mixture to blend well.
  • Spoon about half of the mixture into each avocado half. Garnish with fresh herbs, additional toasted pine nuts or a whole green olive, if desired, and serve!
