Ingredients
6-ouncepouch Signature Kitchens® or canned albacore or solid white tuna packed in water
2TbsOpen Nature® plain Greek yogurt
1tspSignature SELECT® extra virgin olive oil
2Tbschopped green onionwhite and part of green
3-4stuffed extra-large green olives(or about 8 small, chopped)
1tspfinely chopped lemon zest
2TbsSignature Kitchens® walnut pieces or pine nutstoasted
1avocadosliced in half, pit removed (keep or remove the peel as desired)
Instructions
In a medium bowl, toss together tuna (drained), yogurt, olive oil, green onion, green olives, lemon zest, and pine nuts. Stir the mixture to blend well.
Spoon about half of the mixture into each avocado half. Garnish with fresh herbs, additional toasted pine nuts or a whole green olive, if desired, and serve!
