Peach Overnight Oats

Fresh, sweet peaches and crunchy almonds top creamy peach overnight oats blended with cinnamon, honey, and nut milk for a perfect make-ahead breakfast that is easy to make and delicious!

Ingredients

  • 1/2 cup old fashioned rolled oats oats
  • 1/2 cup almond milk or milk of choice
  • 1/4 cup peach Greek yogurt or dairy-free yogurt I used Silk Greek Yogurt
  • 1 teaspoon honey
  • 1 teaspoon chia seeds
  • 1/2 teaspoon cinnamon plus extra for garnish
  • 1/2 fresh peach chopped
  • 1 tablespoon almonds slivered or sliced
  • almond butter optional

Instructions

  • In a medium bowl or large measuring cup, combine the oats, milk, yogurt, honey, chia seeds and cinnamon.
  • Stir well to combine.  Pour the mixture into a glass jar, cup or mason jar with a lid.  Cover with plastic wrap or a lid and refrigerate for a minimum of 2 hours, but overnight is best.
  • Just before serving, slice the peaches and top the overnight oats with the peaches, almonds, a spoon full of almond butter (if using) and a sprinkle of cinnamon.
