Easy Apple Tart

Apple tarts with vanilla ice cream are amazing all year round, but even more perfect in the fall when apples are in their peak season.  My favorite desserts are apple pies, tarts and crisps hands down.  Even more so than pumpkin pie in the fall.  This apple tart recipe is extra crunchy with a double layer of puff pastry.  The sugar caramelizes on the top when baked creating a decadent dessert.

These delicious  apple tarts are lightly sweetened with a cinnamon sugar topping and freshly shaved lemon rind for the perfect tartness to complement the sweet apples.

Ingredients

• 2 sheets frozen puff pastry sheets thawed
• 2 medium pink lady apples cut into thin disks about 1/8 inch thick
• 1/2 tsp ground cinnamon
• 1 Tbs flour
• 1/4 cup sugar
• 1 Tbs lemon zest
• 3 Tbs greek vanilla yogurt

Instructions

• Preheat oven to 425º. In a large bowl, combine apple disks, cinnamon, sugar, flour and lemon zest. Set aside.
• Press 2 puff pastry sheets together to form 1 thick sheet. Cut sheet into 4 squares. Place squares on a parchment lined baking sheet. Brush each square with greek yogurt. Arrange disks in center of each square.
• Bake 22-27 minutes until well browned. Loosen tarts with a metal spatula so it doesn't stick to paper. Allow to cool slightly and serve.
