Garlic & Lemon Lentils

Lemon Lentils are the perfect dish for dinner or a side dish. You only need 20 minutes to make these delicious Garlic & Lemon Lentils. We love this as a main dish with bread and salad, but it’s also a great side for a variety of proteins.

If you have a bag of lentils in the pantry, don’t let them collect dust – use them to make a delicious fiber and protein-filled side dish for dinner.

This recipe has just 8 simple ingredients you likely have on hand, so you don’t need to make an extra trip to the store.

Ingredients

  • 1 cup lentils
  • 4 cups vegetable broth
  • 3 crushed garlic cloves
  • juice and zest of 1 lemon
  • 1/4 cup extra virgin olive oil
  • 1/2 tsp sea salt
  • 1/4 tsp ground white pepper
  • 1/4 cup roughly-chopped parsley

Cooking Instructions

Sort lentils to remove any small stones or dirt. Thoroughly rinse in cold water and place in a 3-quart pan and cover with the vegetable broth and the crushed garlic.

Bring to a low boil, cover with the lid of the pan and gently simmer for 15-20 minutes until lentils are tender but still hold their shape.

Add olive oil, salt, pepper, and the juice and zest of the lemon, salt, pepper, and parsley and stir to mix.

Ingredients

Instructions

  • Drain lentils and return to pan. Add remaining ingredients to lentils and stir thoroughly. Serve hot or refrigerate and serve cold.
  • Add olive oil, salt, pepper and the juice and zest of the lemon, salt, pepper and parsley and stir to mix.
