Grilled Acorn Squash

One of my favorite things about fall is the fresh variety of squash available at the market and on sale.  Squash is incredibly versatile because it can be prepared sweet or savory depending on the toppings you serve with it.  Squash is also incredibly easy to prepare – it just requires low and slow heat to bring out the maximum sweetness in the flesh of the squash.  Grilled squash can also take on the smokiness of the grill, which adds great depth of flavor and caramelization.

I personally prefer sweet with a touch of brown sugar and cinnamon.

Take advantage of the great sale on hard squash at Safeway right now – just $.99/lb and pick up some acorn squash, butternut squash or acorn squash for a great deal.
