Grilled Acorn Squash

One of my favorite things about fall is the fresh variety of squash available at the market and on sale.  Squash is incredibly versatile because it can be prepared sweet or savory depending on the toppings you serve with it.  Squash is also incredibly easy to prepare – it just requires low and slow heat to bring out the maximum sweetness in the flesh of the squash.  Grilled squash can also take on the smokiness of the grill, which adds great depth of flavor and caramelization.

I personally prefer sweet with a touch of brown sugar and cinnamon.

Grilled Acorn Squash Recipes

INGREDIENTS

2 acorn squash
1 Tbs coconut oil

Cut the acorn squash in half and remove the seeds with a large spoon.  You can either save the seeds to toast or discard them.

Brush with coconut oil and grill over low heat  for about 40 min until its soft and caramelized.  Top with sweet or savory seasonings.

Optional Seasonings for Sweet or Savory
sweet: ground cinnamon, pumpkin pie spice, pure maple syrup, honey, or brown sugar
savory: sea salt, black pepper, dried oregano, parsley, rosemary
