Grilled Peach Sundaes
Nothing tastes like summer more to me than fresh Colorado Palisade peaches. They are available right now at Safeway and on sale for just $.97/lb. through July 27th. One of my favorite and most simple ways to serve fresh peaches is grilled with a little ice cream and ground cinnamon. You won’t believe the sweetness achieved by grilling the peaches. It’s best to not touch them when they are on the grill so that they develop the gorgeous grill marks and get the carmelization as a result. I first made this for my kids a few years ago and they laughed and couldn’t believe I was “ruining” a peach by grilling it. Let me tell you, I had the last laugh and this is one of the most requested desserts from my kids anytime we have peaches in the house!

1. Preheat grill to medium (375º-425º). Slice peaches into two halves and gently remove pit. Lay all of the halves, flesh side up, on a cutting board or plate. Brush the top side lightly with coconut oil.
2. Place each half onto grill, flesh side down. Cook 5-6 minutes, until peaches are soft and have good grill marks. Remove from grill.
3. To serve, place two in a serving bowl, top with a scoop of ice cream, a drizzle of honey and a sprinkle of cinnamon.
