Homemade Strawberry Fruit Leather
It’s National Strawberry Day and in honor of day, we are making homemade strawberry fruit leather with the hot sale on strawberries at Safeway right now. All you need to make homemade fruit leather or fruit roll-ups as my kids call them, is fresh strawberries, the zest of 2 – 3 lemons, lemon juice and honey. You puree the strawberries, lemon and honey until smooth then bake on a low heat for several hours until the puree becomes a dried leather consistency. Use parchment paper to prevent the fruit leather from sticking to the pan and also to make individual servings that your kiddos can put into their lunch boxes for a healthy snack! This recipe makes about 12 strips of fruit leather. This is much cheaper to make with these strawberries on sale than buying store bought fruit snacks!

Homemade Strawberry Fruit Leather Recipe
Serving size: 12 strips

Preheat oven to 170 degrees F.
Place strawberries, lemon zest and juice, and honey in a food processor or high powered blender. Process until smooth.
Cover a flat baking sheet with parchment paper. Pour the puree onto the paper and spread thickly and evenly with a spatula. Place in oven and bake 6 – 7 hours, until completely dry (but still sticky).
Roll up the parchment paper. Cut 2-inch segments of fruit leather and store in an airtight container. When ready to eat, peel off the parchment paper and discard.

- zest of 2-3 lemons
- 1 tablespoon lemon juice
- 2/3 cup raw local honey
- parchment paper
