Beef roasts actually freeze really well, so this is a stock-up sale on beef. Anytime you can score a roast for $3.99/lb. or less, you must buy 2-3 or more and stock the freezer. When you are ready to use, place in the refrigerator to thaw for one day, and it’s perfect.
Here’s my recipe for super simple french dip sandwiches:
Generously season the chuck roast with salt, pepper and oregano. Sear the chuck roast on both sides for about 5 minutes per side in a hot non-stick pan so that it creates a nice browned crust. Place into the crock pot and add sliced onions and 2 cups of beef broth. Gently braise in the crock pot for 8- 10 hours on low heat. Slice or shred the meat and serve on french rolls with remaining au-jus from the pan. THE BOMB! This is my kids favorite and most requested meal!
