New Signature SELECT Chocolate Chewy Cookies
Just in time for the holiday season, Safeway has a new and exclusive addition in the bakery with its new Chocolate Chewie Cookie. The Chocolate Chewies are rich, fudgy, indulgent cookies that melt in your mouth! They are cross between a fudge brownie and a chocolate cookie, thus the name chewies.
The cookies are made with egg whites, so you get that light and fluffy texture with a crispy exterior and chewy interior. The cookies have pecans for an extra crunch. The best part is that each chewie contains under 100 calories and less than 5 grams of fat.
Not only is it perfect for dunking in milk, but it’s also the ultimate cookie for entertaining. You don’t need to tell your guests that you didn’t bake these because they will never know! They look and taste homemade and frankly are close enough because they are baked fresh daily in your local Safeway bakery.
Peppermint Chewy Ice Cream Sandwich
I created a simple, yet indulgent ice cream sandwich dessert that is perfect for the holidays. Whether you are hosting friends or family or having an intimate dinner with your immediate family, this Peppermint Chocolate Chewy Ice Cream Sandwich will be a hit for your event!
The ice cream sandwiches feature the Chocolate Chewies as the cookie and the Signature SELECT Peppermint Ice Cream for the sandwich interior.
The peppermint ice cream has swirls of peppermint marbled throughout the mint ice cream and green peppermint candy for extra crunchy texture. It’s perfect for the holiday season on its own, but paired with the chocolate chewies, the combination of chocolate and mint is heavenly!
How to Make Ice Cream Sandwiches
Simply pick up the Chocolate Chewies from your local Safeway bakery and the peppermint ice cream from the freezer aisle. If you want the extra flair from the sprinkles – I recommend red and white sanding sugar or the red candy sprinkles.
Let the ice cream soften for about 5 minutes. Use a large ice cream scooper to scoop about 1/2 cup of ice cream per sandwich. Place the ice cream on the bottom cookie and top with a 2nd cookie. Gently squeeze the 2 cookies together until you have a sandwich. I took a knife and went around the sandwich to smoothe the ice cream so that it was uniform.
If you want extra flair for your cookie, roll the ice cream sandwich in sprinkles on a plate, gently pressing so they stick to the ice cream. Plate the ice cream sandwiches and then place them in the freezer until the ice cream freezes again.

The new Chocolate Chewies are on sale for $3.50 for 12 through December 1st and the Signature SELECT Peppermint Ice Cream is on sale for $2.49 when you buy 5 or more participating items through November 12th.
