What is Quark?

Quark is a European style cultured dairy known for its smooth taste, thick texture, and high protein content. While most cultured dairy turns tart, Wunder Quark takes on a smooth, buttery flavor and is naturally non-tart. Beloved for centuries across Europe and Central Asia for its high protein, thick texture and culinary versatility. Incredibly versatile, quark can be enjoyed in many forms, from snacking to baking.

Because Quark is ultrafiltered, it contains less than 5% lactose, so it may be an option for you if you have a light lactose sensitivity.

How is Quark Made?

The production of Wunder Quark starts with thoughtfully sourced, grass-fed whole milk from family farms.  The milk is mixed with a special blend of dairy cultures that create flavorful, buttery notes and a lingering creaminess.  It’s then ultrafiltered and strained to achieve a thick and rich texture that yields 15 to 16 grams of protein per cup.  The tartness is removed by gently heating the mixture which results in a smooth, non-tart taste.

There are no artificial preservatives, sweeteners, colors, flavors, or growth hormones in the Wunder Quark products.

Wunder Creamery Raspberry Quark – creamy, with a subtle raspberry flavor, the quark is perfect topped with granola and fruit for a morning breakfast, or on its own as an easy on the go high protein option post-workout or as an afternoon snack.

It contains pasteurized whole milk, cane sugar, raspberries, fruit pectin, natural flavor, and cultures.  Each 5.3 oz cup has 160 calories, 6 grams of fat, 13 total carbs, 12 grams of sugar, and 15 grams of protein.

Wunder Creamery Vanilla Bean with a Hint of Coconut Quark has a rich and creamy texture and you can see the organic vanilla bean seeds throughout the quark which gives it its insense and delicious vanilla flavor.   It has just a hint of coconut, as per its name, which makes it perfect to eat on its own, or in a smoothie, to make a cake, a bread or even a delicious fruit dip.  The vanilla was a family favorite in our house.  We used it to make a delicious vanilla bean berry smoothie, which was a perfect high-protein snack for my kids after school.

It contains pasteurized whole milk, cane sugar, creamed coconut, fruit pectin, natural flavor, organic vanilla bean seeds, salt, and cultures.  Each 5.3 oz cup contains 170 calories, 6 grams of fat. 60 mg. of sodium, 14 grams of carbs, 14 sugars and 15 grams of protein.

Wunder Creamery Plain Quark is incredibly thick, creamy, smooth, non-tart and delicious.  It’s a perfect substitute for sour cream, mayo, cream cheese, or Greek Yogurt in both sweet and savory recipes.  Perfect with fresh herbs and lemon as a healthy high protein dip for your favorite vegetables.  I made a lemon-herb quark dip for the center of a crudites platter for the Super Bowl this year and it disappeared in minutes.  Simple, healthy and delicious!

It contains pasteurized whole milk, cane sugar, blueberries, blueberry juice concentrate, fruit pectin, natural flavor, lemon juice concentrate, and cultures.  Each 5.3 oz cup has 160 calories, 6 grams of fat, 45 mg. of sodium, 13 grams of sugar and 15 grams of protein.

How is Quark Different from Yogurt?

There are four key differences between quark and yogurt.

The Cultures:  Quark is made using a special blend of buttermilk cultures from France, which gives the quark its irresistibly smooth, creamy texture.

The Ingredients: Because quark is strained, its consistency is much thicker than yogurt.  It actually takes four cups of milk to make one cup of quark.

The Process: Each batch of Wunder Quark takes about 13 hours to produce from start to finish.  Through its distinct ultra-filtration process, quark has a higher pH level, which delivers lower acidity and a much creamier, milder texture.

Quark Nutrition: Quark is made with non-GMO, grass-fed milk, which is naturally low in fat and has up to 16 grams of protein per cup.
