One Pan Ginger Pork Chops
Looking for a meal idea that uses the great pork sales at Safeway? This One-Pan Ginger Pork Chop Recipe with Roasted Cauliflower and Carrots is amazing and uses many ingredients on sale this week! It’s a quick recipe to put together and it’s delicious with simple ingredients like fresh grated ginger and hoisin sauce. I made this last night and my kiddos loved it! They even devoured all the cauliflower. I think that roasting the cauliflower makes it a little sweeter and gives a delicious smoky flavor with the hoisin sauce. This is a keeper and a recipe I will rotate often because it was so easy to prepare. You can serve with brown rice if you need a carb for a complete meal.
One Pan Ginger Pork Chops
Ingredients:
- 4 boneless pork loin chops, about 1 inch thick
- 2 cups cauliflower florets
- 1 cup baby carrots
- 2 Tbs Coconut Oil
- 2 Tbs fresh ginger, grated
- 1/3 cup hoisin sauce
- 1 tsp kosher salt
- 1/2 tsp black pepper
Directions:
Preheat oven to 475 degrees. Brush a large rimmed baking sheet with the coconut oil. Add cauliflower, carrots, 1 tablespoon ginger and half of the hoisin sauce, salt and pepper to baking sheet and toss to combine.
Arrange vegetables in a single layer on the baking sheet, leaving room for the pork on one side of the sheet, and place in oven for 15 minutes. On a plate, season pork loin chops with remaining tablespoon of ginger, hoisin sauce, salt and pepper.
Remove baking sheet from oven and add pork chops. Return to oven for about 15 minutes until internal temperature of the pork is 145 degrees. Let rest on baking sheet for 5 minutes and serve.
