Fresh Peach Salsa Recipe
With peaches on sale for only $.77/lb at Safeway, I couldn’t resist buying a lot and making some special seasonal recipes using fresh peaches. I love fruit salsas with fish, but you can easily use this salsa recipe with pork chops or even chicken, or just serve it with tortilla chips at your next dinner party. The combination of sweet peaches with the crunch of red onion and the heat of the jalapeno is amazing. I hope you enjoy it!
Ingredients
- 5 Fresh Medium Peaches, Peeled and Chopped
- 1 whole Medium Red Onion, Diced
- 1 whole Red Bell Pepper, Seeded And Diced
- 1 whole Jalapeno, Seeded And Minced
- 1 Tablespoon Cilantro, Chopped
- ¼ Teaspoon Chili Powder
- Juice Of 2 Limes
- Dash Of Garlic Salt (to taste)
Preparation
Use a vegetable peeler to peel the fresh peaches, then slice them into slivers and chop into small pieces. (I prefer a larger peach chunk in my salsa, so chop to your liking). Place the peaches into a bowl with the diced red onion, diced red bell pepper, minced jalapeno, and chopped cilantro. Add a pinch of garlic salt and the chili powder as well as the juice of 2 limes. Stir well.
Taste and add a little more garlic salt, lime or chili powder if you prefer.
Cover with plastic wrap and refrigerate for at least 1 hour before serving. Serve with tortilla chips or with your favorite fish tacos or grilled chicken.
This recipe was inspired by Ree Drummond’s Peach Salsa recipe, but she uses canned peaches, juice of 1 lime, no garlic salt and a lot more cilantro. I do not care for the taste of cilantro, so I used less than half what her recipe included. Try it out and let me know what you think.
