Pot Roast Pizza
With all the amazing deals we’ve had on beef roasts from Safeway, I was looking for some new ways to prepare the left over pot roast and tried this pot roast pizza last night. I’ve made BBQ chicken pizza’s before with leftover BBQ chicken, so it’s basically the same concept. Using Safeway Naan bread that you can find in your local bakery, you simply prepare the pizza using ingredients you likely have in your pantry plus the left over beef from your pot roast earlier in teh week.
The Safeway Naan Bread comes in two sizes at Safeway – small mini naan’s that you can fit into a toaster and larger naan bread that you can use as the base for these pizza’s to feed your family. If you are cooking for one, then the small naan may be perfect for you!

Leftover Makeover: Pot Roast Pizza Recipe
Ingredients:
Directions:
1. Preheat oven to 400°. Place naan on a rimmed baking sheet. Spread pizza sauce on naan. Then, top with pot roast, onion and cheese. Bake 10-12 minutes, until cheese is melted. Remove from oven. Serve.
Pro Tips:
1. Fully cooked ground beef crumbles can be substituted for the pot roast.
2. This recipe could easily be cooked on the grill instead of the oven. Place naan on a medium heated grill and cook for about 2 minutes, until there are grill marks. Flip and add toppings. Continue cooking until cheese is melted.
