Italian Sausage and Spinach Skillet Lasagna Recipe

Here is a simple recipe for making lasagna in a skillet in under 30 minutes!  This dish is full of flavor since you use Italian sausage as the meat and fresh mozzarella and spinach layered on top.  Rather than cook the noodles ahead of time and layer with cooked meat, the noodles cook with the sausage and veggies to have a delicious lasagna dish in half the time!

How to Make Skillet Lasagna

  1. Heat a large skillet over medium-high heat. Cook onion and garlic for 2 minutes until soft and fragrant.  
  2. Add sausage to the skillet, breaking into smaller pieces.  Cook until browned and crumbly, 5 to 7 minutes.
  3. Pour crushed tomatoes and tomato sauce over sausage, add Italian seasoning, salt, and pepper and mix well.
  4. Layer broken noodles over sausage and tomato mixture.  Gently stir to moisten noodles.
  5. Bring to a boil.
  6. Cover skillet, reduce heat and simmer until noodles are cooked and sauce is thickened about 25 minutes.
  7. Add ricotta cheese in large dollops around the skillet then smooth with a spatula to create a thin layer.  Add chopped spinach, and top with sliced mozzarella cheese; cover skillet and cook for another 5 minutes to melt the cheeses.   Remove from heat and top with Parmesan cheese and let sit for a couple of minutes before serving.
  8. Garnish with fresh chopped basil and serve

  • 2 cups chopped fresh spinach
  • 1/2 cup ricotta cheese
  • 4 ounces fresh mozzarella cheese sliced
  • 1/4 cup grated Parmesan cheese
  • Fresh chopped basil for garnish optional
