Barbacoa Beef Ingredients

  • 1 3 lb. chuck roast or cross rib roast
  • 3 cloves of garlic, minced (or 1 tablespoon of garlic powder)
  • 1 tablespoon chipotle peppers in adobo, chopped
  • 1 can diced green chiles
  • juice of one lime
  • 1/2 cup water or beef broth
  • 1 tablespoon cumin
  • 2 teaspoons dried oregano
  • 2 teaspoons salt, or to taste
  • 2 teaspoons freshly ground black pepper

 

How to Make Barbacoa Beef

Place the roast in the slow cooker.  Season the roast with oregano, cumin, salt, pepper, and garlic.  Add diced chipotle peppers, green chiles, and beef broth or water to the slow cooker.

Cook on low for 6-8 hours or high for 4-5 hours.

Shred the beef with 2 forks into the juices.  If using a cross-rib roast, discard any large clumps of fat leftover before shredding.
