With school back in session, weekly meal planning is my only saving grace to getting dinner on the table. Most days, I actually have dinner prepared by 9 am, in an effort to avoid the 5 pm “What’s for Dinner” conundrum. With three kids in sports, we are running around after school from one field to the next and I do not have time to worry about dinner prep. Oftentimes, my kids eat dinner right at 4 pm when they get home from school and then have a light snack after their sports practice. It my not work for everyone, but I prefer to give my kiddos a meal with substance and nutrition rather than have them raid the pantry at 4 pm.
Here’s what I’m making this week based on sales at Safeway:
I always plan my meals around the meat sales, since that is the most expensive part of dinner. Since beef roasts are $3.88/lb. pork roasts are $1.29/lb, and chicken breasts are $1.67 per lb, those proteins are definitely are on my meal plan for the week. Also – I always make enough for leftovers because that’s what my hubby and I eat for lunches most days!
Monday: Slow Cooker Mexican Shredded Pork Tacos
Ingredients: Pork Shoulder Roast on sale for $1.49/lb, corn tortillas, avocados, cilantro, spices, lime, shredded cabbage

Tuesday: Parmesan Chicken with Penne Pasta
Ingredients: boneless, skinless chicken breasts on sale for $1.68/lb., Barilla penne Pasta on sale for $1.00, Free Ragu pasta sauce, Safeway breadcrumbs, spices, butter, and olive oil

Wednesday: French Dip with Tater Tots
I’ve shared this recipe before, but it really is a staple recipe in my rotation, so I’m sharing again.
Ingredients: 1 USDA Cross-Rib Roast or Chuck Roast on sale for $3.88/lb, 1 box of beef broth, salt, pepper, oregano, 1 onion, hoagie rolls, sliced provolone cheese and Safeway Kitchens Tater Tots on sale for $2.00
Place the roast in the crock pot, cover generously with salt, pepper and oregano, add sliced onions and add 1 cup of beef broth. Cook on low for 8 – 10 hours. Just before serving, slice the rolls and place sliced cheese on one half. Place on baking sheet and broil in the oven for about 5 -6 minutes just until the cheese melts and the buns are toasted. Remove the meat from the crock pot, and either slice or shred with a fork to assemble the sandwiches. Use the remaining broth and pan juices as the au-jus. if you don’t have enough, you can always add more beef broth to the crock pot and heat on high.
Thursday: Sweet & Sour Chicken Stir-Fry
Ingredients: chicken breasts on sale for $1.68/lb., Safeway rice on sale for $.99, red bell peppers, canned pineapple, cornstarch, sugar, fresh ginger
