How to Use Quark as a Yogurt Alternative

Quark is the latest high-protein addition to the dairy aisle at Safeway and is a healthier cooking alternative to yogurt, sour cream and cream cheese that you should consider for your kitchen.  Full of healthy probiotics that can help boost immunity, quark is a star ingredient that lends itself to both sweet and savory dishes

Quark is perfect for a high-protein breakfast, afternoon snack or in a smoothie.  It’s also a perfect base for dips, dressings, and sauces.  You can also use it in baked goods anytime you want to boost the protein.

Read our review of Wunder Creamery Quark, now available in four delicious flavors at your local Safeway.

What is Quark?

Quark is a European style cultured dairy known for its smooth taste, thick texture, and high protein content. It looks and feels like yogurt, but it’s not.  While most cultured dairy turns tart, quark takes on a smooth, buttery flavor and is naturally non-tart.

How is Quark Different from Yogurt?

There are four key differences between quark and yogurt.  The cultures, the ingredients, how its made and it’s nutrition.

Quark is made using a special blend of buttermilk cultures from France, which gives the quark its irresistibly smooth, creamy texture.  Read about how probiotics are an important part of immunity health here.

Because quark is strained, its consistency is much thicker than yogurt.  It actually takes four cups of milk to make one cup of quark.  You can actually stick a spoon in it and it will stand straight up, it is that thick!

Each batch of Wunder Creamery Quark takes about 13 hours to produce from start to finish.  Through its distinct ultra-filtration process, quark has a higher pH level, which delivers lower acidity and a much creamier, milder texture.

Quark is made with non-GMO, grass-fed milk, which is naturally low in fat and has up to 16 grams of protein per cup.

How to Use Quark in Cooking

Swap quark for sour cream, cottage cheese, cream cheese and yogurt for more nutrition and fewer calories.  Quark has 3 times more protein than sour cream and 90% less sodium than cottage cheese.

Use quark in smoothies, soups, dips, and dressings to add extra creaminess and protein.

For a healthier alternative to cream cheese, consider quark which is naturally thick and has 89% less fat than full-fat cream cheese.   Spread quark on bagels, wraps, and sandwiches.

Use for baked goods as an alternative to yogurt to boost the protein.
