Healthy Apple Oatmeal Muffins
These healthy apple muffins are wholesome and delicious. A perfect recipe for fall when fresh apples are abundant.
Last week’s cold weather put me into a baking mood. There is nothing I enjoy more than the smell of fresh-baked apples and cinnamon on a cool fall day. My kids are ecstatic because they love taking home-baked goodies to school for snacks and in their lunch boxes.
Ingredients in Apple Oatmeal Muffins
- whole rolled oats
- baking powder
- raw local honey
- kosher salt
- eggs
- milk (such as almond, cashew, or regular)
- organic coconut oil
- 1/2 apple, diced
- ground cinnamon
How to Make Healthy Apple Oatmeal Muffins
1. Pre-heat oven to 350 degrees F. Spray 12 muffin cups with nonstick cooking spray.
2. In a medium bowl, whisk eggs, almond milk, honey, and salt. Stir in oats and baking powder, mixing evenly.
3. Pour melted coconut oil while continually mixing.
4. Scoop batter evenly into 12 muffin cups. Sprinkle about 2 – 3 teaspoons of the diced apple in the center of each muffin. Sprinkle on cinnamon if desired.
5. Bake for 20 – 25 minutes, or until the oats are golden brown. Let cool and enjoy
*Tip: these freeze great in a freezer zip-top bag. Just remove an individual Oatmeal Muffin, and microwave for 15 seconds or so for a delicious and nutritious breakfast for your little one on the go!

- 2 eggs beaten
- 3/4 cup milk such as almond, cashew, or regular
- 3 Tbs organic coconut oil
- 1/2 apple diced
- 1/2 tsp ground cinnamon
Instructions
